The 'Luna Calante' three-bottle case contains macerated white wine from the Porta del Vento winery, made from 100% Catarratto Comune grapes. The vineyards are located in Camporeale, at 600 metres above sea level, on sandy soil with sandstone, with north-south exposure and natural ventilation. The grapes are grown using organic and biodynamic methods, harvested manually and fermented spontaneously. In the winery, the grapes are cooled, destemmed and transferred to concrete tanks for fermentation on the skins for about 30 days, with daily punching down. The wine is aged for 6 months in concrete and at least 4 months in the bottle before being released for sale. Bright golden yellow in colour, it has an intense and complex bouquet with notes of quince, carob and candied fruit. The palate is warm, elegant and enveloping, with a balanced structure and a finish of dried fruit. Perfect with fish couscous, seared tuna, blue cheeses and roast lamb, Luna Calante best expresses the aromatic complexity of the territory and the quality of the Catarratto grape variety.
