The 'Blasi' three-bottle case from the winery of the same name contains three wines that express elegance, freshness and the soul of the Umbrian territory: Grechetto, 1742 Metodo Classico Brut Rosato and Blasi Bianco Sauvignon.
Grechetto is an elegant and fresh white wine, pleasant and harmonious on the palate, characterised by hints of white fruit. It ferments at low temperature and ages in stainless steel on fine lees, preserving its freshness and liveliness. The 1742 Brut Rosato is a blend of Chardonnay and Sangiovese grapes, dedicated to the year the historic winery was built. Grechetto from Cantina Blasi is an elegant, fresh white wine that is pleasant and harmonious on the palate. Its aromatic profile is characterised by enveloping aromas of white fruit, reflecting the uniqueness of this wine.
The vineyard is located on medium-textured clay soils and extends over hilly terrain at an altitude between 300 and 450 metres above sea level. The spurred cordon training system optimises grape quality, ensuring careful production control from cultivation onwards.
In the cellar, the grapes are gently crushed and conveyed to the press. Soft pressing extracts only the free-run juice, which then ferments at a low temperature (between 14 and 16 °C) for around 15 days in steel tanks. Malolactic fermentation is not carried out to preserve the wine's freshness and liveliness.
The wine matures in steel tanks on the fine lees for about 3–4 months, giving it additional complexity and structure. Grechetto is then aged in the bottle for a further 4–5 months to reach its maximum expression of elegance and balance.

The Metodo Classico Brut Rosé sparkling wine ‘1742’, produced by Blasi, is named after the year that the historic winery was built and is still used for ageing today. Bino, the company's founding father, purchased it when he became passionate about the world of wine. This sparkling rosé is made from a blend of Chardonnay and Sangiovese grapes, grown in the Petrella and Villa Pace vineyards. Harvesting in the first 10 days of August ensures adequate acidity and the correct alcohol content for the Metodo Classico.
In the cellar, the red Sangiovese grapes and the white grapes are gently pressed. The first fermentation takes place at a low temperature of between 14 and 16°C using selected yeasts in steel tanks for around 15 days to maintain the freshness and aroma of the grapes. After ageing in steel for at least three months, the wine is bottled according to the Metodo Classico principles, with the addition of yeasts and sugar for the second fermentation. The wine is then aged in bottles on wooden pupitres in the underground tunnel of the cellar for at least 12 months.
After disgorgement, the wine rests in the bottle for a further four months before being released for sale. In the glass, the wine is a bright pink colour with a fine, creamy effervescence. The aroma opens with notes of red fruits such as redcurrant, cassis and raspberry, with a subtle hint of bread crust in the background. The wine is fresh and mineral on the palate, enhancing the pleasure of every sip, and is perfect for celebrating or enjoying as an aperitif with friends.

The "Sauvignon" wine, produced by the Blasi family, is made from 100% Sauvignon Blanc grapes, one of the world's most famous grape varieties. The concept behind the label is eclecticism: a fresh, young, lively wine with the typical Sauvignon character, releasing fruity and citrus notes and capable of adapting to any situation.
The company recently decided to convert all its vineyards to organic farming, out of respect for the land and the hills of Umbertide.
The family's other key focus is undoubtedly quality, though they do not follow trends. Today, this would necessarily involve viticulture seeking out native grape varieties, whether excellent or insignificant. This is why international grapes such as Sauvignon are present in the family's vineyards. The Petrella vineyard is located between 200 and 250 metres above sea level, characterised by clayey soils with pebbles. After a meticulous harvest in mid-September, the fermentation process takes place over approximately 15 days at a controlled temperature between 14 and 16°C in steel tanks, preserving the fresh varietal notes. The wine is then aged in steel tanks on fine lees for 5–6 months before being transferred to bottles for a further 6 months of ageing prior to release.
In the glass, the wine is a straw yellow colour, and the aroma offers fresh notes of yellow fruit, enriched with citrus hints. On the palate, it is fresh and vibrant with a savoury character and good structure, offering a medium-long finish.
It is a wine suitable for any occasion.
